Ratatouille

Japanese eggplant, for symmetry reasons.

I’ve been wanting to make this forever!

That herb and oil seasoning on top is chef’s kiss. Went with a Japanese eggplant instead of American because my OCD needed symmetry.

Paired with turmeric rice and salmon because I’m boujee… and it was on sale this week.
